The Ministry of Health has recently issued a circular to solicit opinions on the "Limit of Pathogenic Bacteria in Food Safety Standards". The content of 8 kinds of lethal bacteria, such as Salmonella, Shigella, Staphylococcus aureus and Streptococcus hemolyticus, which may appear in food, is clearly stipulated in the new standard.
 
The new standard stipulates the pathogenic bacteria content of 17 kinds of food, such as meat and meat products, aquatic products, egg products, grain products, legumes, baked and fried foods, candy, chocolate and cocoa products, condiments, instant food and so on. Among them, for all food products processed by canning technology, the unified regulation is that "food produced by canning technology conforms to commercial sterility". According to the introduction by the Ministry of Health, in the process of formulating the standard, the actual situation in China was fully taken into account, combined with the risk of high-risk food poisoning and pathogenic bacteria in China, the risk of pathogenic bacteria to various types of food in China was analyzed, and the relevant standards of international organizations and developed countries were also referred to.
