 Enzymatic processing of Hunan citrus peel and bag removal technology

 
Peeling saves labor and time, and peeling is safe and water-saving. The ardent expectation of Chinese citrus processing industry is becoming a reality. Recently, more than 130 delegates from more than 30 citrus processing and equipment manufacturing enterprises, scientific research institutes and colleges and universities gathered in Changsha to participate in the technical training of Citrus peeling and peeling production sponsored by the Agricultural Products Processing Bureau of the Ministry of Agriculture.
 
The export of canned citrus in China accounts for 70% of the international market. Traditional peeling and acid-alkali peeling processes are increasingly confronted with problems such as rising labor prices, green barriers and technical barriers, so new technologies are urgently needed to be developed. "Enzymatic peeling and peeling technology of citrus" is the main research content of Hunan Province's "Eleventh Five-Year Plan" major scientific and technological project "Research and Demonstration of Key Technologies in Modern Citrus Industry". After years of tackling key problems, the project team has achieved the first domestic and international advanced level of results, and created a complete set of enzymatic peeling production line and enzymatic peeling automatic trough device, pilot-scale effect is remarkable. The results were also included in the major industrial technology extension project of the Ministry of agriculture's agricultural products processing Bureau in 2008.
 
Compared with the pilot test, enzymatic peeling can reduce 1/3 labor, shorten the production time by 40%, and improve the automation of the factory and food hygiene quality. Enzymatic stripping technology can not only solve the problems of heavy metal residue and low product safety caused by acid-alkali stripping, but also solve the environmental pollution problems caused by acid-alkali wastewater produced in Citrus canning production. According to the calculation of reducing acid-alkali wastewater discharge by 40 tons per ton of products, it can be extended to reduce the discharge of 24 million tons of wastewater annually in China. It is equivalent to 1 years of urban sewage discharge from 6 million urban population.
