The definition of canned food in GB7098-2015 is as follows: commercial aseptic canned food is processed from fruits, vegetables, edible fungi, livestock, poultry, aquatic animals and other raw materials through processing, canning, sealing, heating and sterilization. According to Lin Taohui, secretary-general of the Canned Food Science and Technology Working Committee of China Food Industry Association, canned food can be understood as canned food, which is heated and sterilized after sealed packaging and reaches commercial sterility. Lin Taohui explained: "Generally speaking, canned food will not deteriorate during the shelf life at room temperature, but not all packaged food that will not deteriorate during the shelf life at room temperature belongs to canned food. There are a large number of processed food, although it is also sterilized by heat, because food preservatives are added to protect it. There will be no spoilage during the quality period. This kind of processed food can not be called canned food. Therefore, judging whether canned food is canned depends on whether preservatives such as sodium sorbate or sodium benzoate are added. All canned food with preservatives is not canned food, because canned food does not need to add preservatives at all.
