Mushrooms
These brown to dark brown mushrooms are also called "oak", "China" or "Schwarzwald" mushrooms. They have an umbrella cap. They are made of wood, preferably cooked thoroughly. Stems are usually woody and should be removed before cooking. However, they can be added to the flavor strength of stocks.
Oysters
Named after the shape of their oyster shells, these delicate velvet mushrooms have pale yellow, yellow, cream and gray tones. They are more fragile than most other mushrooms, so they should be used shortly after purchase and added to the dishes at the end of the cooking.
Royal trumpet
Also known as the "Oyster king", these light brown trumpet shaped caps are on the tender white stems.
Maitake
These are known as "forest hens" or "dancing mushrooms". These medium brown, wrinkled mushrooms are aromatic and rich in wooden taste. Just cut a strip of silver from the bottom before cooking.
Yi nog
These small, white and clustered mushrooms have mild flavor, crisp texture, and are very easy to use. Just trim the bottom and add raw hats and stems to salad and sandwiches or arrange for decorations on cooked food. In order to keep their crisp texture, they should not be heated.
Beech
Beech mushroom is a small white or light brown hat with crisp texture and mild sweetness. Before cooking, food should be added to food to maintain its crispness.
